craft: double the pinterest inspiration

Today's guest contributor moved to New Jersey from California a few months ago and I miss her dearly! This is Carrie's first post since leaving the sunny state but she's back with two great inspirational posts!
The pins for pumpkin recipes on Pinterest lately are making me drool, especially the one from Brown Eyed Baker. They have inspired me to dig out my mom’s pumpkin bread recipe - what better way to welcome fall?! From this recipe, I made 3 small loafs and used the extra mix to make a few muffins with chocolate chips. So delish!


My Mom's Pumpkin Bread Recipe
Ingredients:
3 c. sugar                                                      1 tsp. nutmeg
3  1/3 c. flour                                                1 c. oil
2 tsp. baking soda                                         2/3 c. water
3 tsp. cinnamon                                             4 eggs
1 ½ tsp.  ginger                                             2 c. pumpkin (1 small can)

** Chocolate chips (optional)
** 1 c. nuts (optional)

Directions:
Preheat oven to 350. Grease & flour 2 large or 4 small loaf pans. In a large bowl, mix all dry ingredients & stir with a whisk. Add moist ingredients-mix until smooth. Pour into pans. Bake at 350 for:

2 large pans - 60 minutes
4 small pan - 50 minutes
muffins - 15-20 minutes

Test with a toothpick. Cool in pan. Turn out on racks. Wrap in plastic. Freezes well. 



Gender Neutral Baby Shower

This summer, I offered to do the decorations for a relative’s baby shower. The parents-to-be are not finding out the sex of the baby, so I went with a color palette of mostly green and yellow pastels. I searched Etsy and Pinterest for ideas. Here is what I found and how I made it my own.
